These recipes of long ago, helping my mom in the kitchen, I now share with you. They are: Little Red Hen, Baked Steak Deluxe, Mom’s Fruit Salad and Graham Cracker Squares. Hope you enjoy!


Little Red Hen


1 (2 1/2 lb.) chicken, cut into parts (I use 6 to 8 chicken breasts)


1/2 cup chopped green pepper


1/2 cup chopped onion


1 (l0 3/4 oz.) can tomato soup


2 tablespoons brown sugar


1 tablespoon seasoned salt, optional


1 tablespoon pepper


1/4 cup vinegar


1 tablespoon Worcestershire sauce


1 (6 oz.) can sliced mushrooms


Place chicken in 3 quart baking dish. Combine remaining ingredients. Mix well and pour over chicken. Bake at 325 degrees for 1 1/2 hours. Serves 6. Great over rice.


Baked Steak Deluxe


2 lb. sirloin steak


1/2 teaspoon salt


1/4 teaspoon pepper


1 clove garlic, minced


1 cup ketchup


3 tablespoons Worcestershire sauce


1/2 cup butter


1 tablespoon lemon juice


1 onion thinly sliced


Place meat in shallow pan and broil on one side only until slightly brown. Season the browned side with salt, pepper, and garlic. Turn and season the raw side the same way. Heat the ketchup, Worcestershire sauce, butter and lemon juice in a small saucepan, just so hot. Pour over the raw side of steak and top with onion. Bake uncovered at 350 degrees for l hour. Serves 4.


Mom’s Fruit Salad


4 unpeeled apples, chopped


5 bananas, sliced


1/2 cup pecans or other nuts chopped


1/2 cup sugar


2 tablespoons flour


1/4 teaspoon salt


1 cup milk


1/2 stick butter


Mix and cook: sugar, flour, salt, milk and butter over medium heat until thickened. Cool several hours or overnight before adding to apples and bananas. The dish should be served immediately after combining with fruit. Other fruit also works well in this recipe. This was always a favorite at our house during the holidays and summer. Serves 8 to 12.


Graham Cracker Squares


1/2 cup melted butter or margarine


1 cup vanilla wafers or graham cracker crumbs


1 cup shredded coconut


1 cup semisweet chocolate chips


1 cup chopped pecans


1 (l4 oz.) can sweetened condensed milk


Spread butter in 9 by 13 inch baking pan. Layer vanilla wafer crumbs, coconut, chocolate chips and pecans in prepared baking pan. Pour condensed milk over layers. Do not mix. Bake at 350 degrees for 30 minutes. Let stand until cool and cut into squares. You may use butterscotch chips, peanut butter chips, or a mixture of chips. About 18 squares.
