The possibilities are endless when it comes to chicken: moderate in calories, modest in price and many ways of preparation. We offer the following flavorful recipes for you to enjoy: Ranch Chicken and Yellow Rice, Company Chicken Bake, a delicious one dish meal — Chicken with Vegetables and a yummy desert called Easy Filled Cupcakes which are good with any meal. Ranch Chicken and Yellow Rice


1 (3 l/2 lb.) chicken


1 large onion, chopped fine


1 large green pepper, chopped fine


1 package (5 oz.) Spanish yellow rice


Boil chicken, onion, and pepper, with just enough water to cover, until done. Cook rice, using broth from chicken according to directions on package. Combine chicken meat (cut coarsely), removed from bones, add rice and place in a casserole dish. Top with cheese sauce and heat at 350 degrees for 20 minutes or until heated through. Reserve extra sauce to serve with meal. Serves 6.


Cheese Sauce:


4 tbsp. margarine or butter


4 tbsp. flour


2 cups milk


1 cup cheddar cheese, grated


salt and pepper to taste


Melt margarine. Add flour all at once. Remove from heat for 5 seconds; stir with wire whisk or fork. Add milk. Return to stove and cook over low heat until thick, stirring constantly. Add cheese and stir until melted. Pour over casserole.


Company Chicken Bake


4 whole chicken breasts, may be deboned


3 tbsp. butter, melted


1 (10 3/4 oz.) can cream of mushroom soup


1/2 cup dry sherry


1 (2 oz.) jar chopped or minced pimiento


1 (8 oz.) carton whipped cream


Cheese and chives


Brown chicken breasts in butter and place in an 8-by-ll or 9-by-9 baking dish (lightly sprayed with cooking oil). Stir remaining ingredients into browning butter and mix thoroughly. Pour over chicken and bake at 300 degrees


for 55 to 60 minutes. If doubled, allow a little more baking time. May be prepared ahead and baked later. Serves 6 to 8.


Chicken with Vegetables (one dish meal)


4 chicken breasts, skinned (or dark meat if preferred)


Greek seasoning herbs, optional


2 small potatoes, quartered


2 squash, cut into 1-inch pieces


2 stalks celery, cut into l-inch pieces


2 medium onions, quartered


1 green pepper, cut in pieces


2 carrots, sliced


Worcestershire sauce


salt and pepper


garlic powder


Season chicken with salt and pepper, garlic powder, and Greek seasoning. You may want a few herbs. Place in baking dish or baking pan. Add vegetables on top and sprinkle with salt and pepper and Worcestershire sauce.


Add approximately 1/4 to 1/2 cup water. Cover tightly with a lid or foil and bake 1 1/2 hours in 300 degrees oven or until vegetables are done but not overcooked. Serves 4. It may be frozen.


Easy Filled Cupcakes


1 (8 oz.) package cream cheese


1/3 cup sugar


1 egg


1 (6 ounce) package semi-sweet chocolate bits


1 package chocolate cake mix


Salt, pinch


Mix cream cheese, sugar, egg, salt and chocolate bits. Mix cake as directed on box. Fill paper baking cups 2/3 full of cake batter. Put 1 rounded teaspoon of cheese mixture into each and bake as directed for cupcakes on cake package.
